Biography: Dr. Vincent Nyau is currently working as a Lecturer and Researcher at the University of Zambia, Department of Food Science and Nutrition. He completed his Ph.D. with a specialization in Nutraceuticals at the University of Cape Town in 2013, and a Master of Science in Food Technology – major in Post-harvest and Food Preservation Engineering at the Katholieke Universiteit Leuven in 2006. Dr. Nyau has expertise in agricultural food systems, food processing, post-harvest technologies, and nutraceuticals. He has demonstrated experience in the coordination and facilitation of workshops and training programs and has participated in several consultancy and research work in the Department. He has authored various research articles on phenolic phytochemicals and antioxidant activities of plant foods.
